INGREDIENTS

- 1 Fresco Basil + Parmesan Pesto
- 1 tablespoon extra Virgin olive oil
- 8 6-inch skewers
- 1 pound mozzarella cheese
- 1 pint red cherry tomatoes
- 5 basil leaves, sliced thin
- Salt and pepper to taste
INSTRUCTIONS
Wash the cherry tomatoes and place in a bowl.
Take the mozzarella cheese piece and cut in half inch cubes. Place in a bowl.
Start by cutting the chicken breast into 1-inch pieces. Place chicken pieces into a bowl, add salt and pepper and toss to coat all sides. At this point, you can add a marinade if you would like.
Heat 2 tablespoons of olive or canola oil in a pan. Cook chicken until it loses its pink color and is slightly browned on both sides, about three to four minutes on each side.
Take the skewers and start building. First place a strong base such as cheese pieces and follow with the rest of the ingredients.
Take a silicon brush and start spreading the Basil + Parmesan Pesto Sauce to taste.
